cleaning-out-the-cabinets-creation

It's one of those evenings where hunger is nagging but the contents in your kitchen are not cohesive. With a little imagination, however, a tasty, hasty meal can easily be whipped up.

Ingredients:
- 1 can 98% fat free cream of mushroom soup
- handful of mushrooms, whole or sliced (mine were whole, but either works)
- a can of quartered artichoke hearts
- grape tomatoes, cut in half (again, any tomato such as Roma or on-the-vine tomatoes will do, just dice them into medium-sized chunks)
- 1 box of whole wheat thin spaghetti pasta
- jar of mixed herbs (basil, oregano and tomato)



Mix the tomatoes, mushrooms and artichoke hearts in a pan. Sprinkle with the herbs and saute until the mushrooms are rubbery.

Empty the can of cream of mushroom soup mixed with about 3/4 the can of water. Let simmer to thin it a bit.

Cook the pasta according to the package.

Put pasta in a bowl, top with desired amount of sauted veggies and pour over with desired amount of cream of mushroom sauce. Finally... enjoy this easy, healthy, cabinet-cleaner meal!
